  • 200 g glass noodles Also called sweet potato noodles.
  • 1 cup spinach
  • 1 cup carrot, julienned For a vibrant color.
  • 1 cup bell pepper, julienned Any color bell pepper works.
  • 1 medium onion, sliced
  • 2 cloves garlic, minced Enhances flavor.
  • 200 g beef or chicken, sliced (optional) Can be omitted for a vegetarian option.
Sauce and Seasoning
  • 3 tablespoons soy sauce
  • 2 tablespoons sesame oil Used for stir-frying.
  • 1 tablespoon sugar Balancing sweetness.
  • to taste Salt and pepper
Garnish
  • Sesame seeds For garnishing.

Method
 

Preparation
  1. Soak the glass noodles in hot water for about 30 minutes or until soft. Drain and cut into shorter lengths if desired.
  2. In a large skillet or wok, heat sesame oil over medium heat. Add garlic, onion, and protein (if using), and stir-fry until the protein is cooked through.
Cooking
  1. Add the carrots, bell pepper, and spinach, and continue to stir-fry for a few more minutes until the vegetables are tender.
  2. Toss in the soaked glass noodles to the skillet, followed by soy sauce, sugar, and season with salt and pepper. Mix everything together until well combined and heated through.
  3. Serve hot, garnished with sesame seeds.

Notes

Store leftovers in an airtight container in the fridge for about 3-4 days, or freeze for up to 2 months.
