Preparation
- Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
- In a medium bowl, whisk together flour, baking powder, baking soda, and salt.
- In another bowl, beat the softened butter until creamy. Gradually add granulated sugar and brown sugar, mixing until light and fluffy.
- Mix in the egg, egg yolk, and vanilla extract, then add sour cream or Greek yogurt and blend until smooth.
- Gradually incorporate the dry ingredients into the wet mixture, stirring just until combined.
Baking
- Shape the dough into about 1 1/2-inch balls and roll them in coarse sparkling sugar if desired.
- Place the balls on lined baking sheets, spaced about 2 inches apart.
- Bake for 10-12 minutes until edges are golden but the center is soft.
- Let cookies cool on the baking sheet for about 5 minutes before transferring to a wire rack.
Notes
Chill the dough for at least 30 minutes before baking for thicker cookies. These cookies can be stored in an airtight container for about 3 days or frozen for up to 3 months.
