Preparation
- Preheat the oven to 325°F (165°C) and grease your cookie sheets or line them with parchment paper.
- In a large mixing bowl, beat together the unsalted butter, cream cheese, and powdered sugar until light and fluffy (about 3-4 minutes).
- Add the egg and vanilla extract, mixing until fully combined.
- In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add this to the wet mixture, mixing until just combined.
- Roll tablespoonfuls of dough into balls and slightly flatten them on the prepared cookie sheets.
- Bake for approximately 15 minutes or until golden at the edges. Let them cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
Notes
For an extra soft texture, consider chilling your dough for 30 minutes before baking. You can also mix in chocolate chips or nuts for a fun twist.
