Ingredients
  

Dough Ingredients
  • 4 cups 4 cups flour (400g) All-purpose flour
  • 1 cup 1 cup warm milk (200ml) Warm, not hot
  • 1 ea 1 egg Large, at room temperature
  • 65 g 65g softened butter At room temperature
  • 10 g 10g instant yeast Active dry yeast can also be used
  • 3 tablespoons 3 tablespoons sugar (60g) Granulated sugar
  • 1 packet 1 packet vanilla sugar For added flavor
  • 1 pinch A pinch of salt Helps balance sweetness
Apple Filling
  • 2 ea 2 apples, peeled and diced Any variety of sweet apples
  • 2 tablespoons 2 tablespoons brown or white sugar Use brown sugar for deeper flavor
  • 1 teaspoon 1 teaspoon cinnamon Ground cinnamon
  • 1 teaspoon 1 teaspoon cornstarch For thickening the apple mixture
  • 0.5 cup Half a cup water To cook the apples
Cheesecake Filling
  • 200 g 200g cream cheese Softened for easy mixing
  • 2 tablespoons 2 tablespoons sugar Granulated sugar
  • 1 packet 1 packet vanilla sugar For added flavor
Topping
  • 1 tablespoon 1 tablespoon butter (20g) Melted for brushing
  • 1 tablespoon 1 tablespoon sugar Granulated sugar
  • 0.5 cup Half a cup flour For crumbly topping
Glaze
  • 1 cup 1 cup powdered sugar For the glaze
  • 2 tablespoons 2 tablespoons milk Adjust for desired consistency

Method
 

Prepare Apple Filling
  1. In a saucepan, combine 2 diced apples, 2 tablespoons sugar, 1 teaspoon cinnamon, 1 teaspoon cornstarch, and ½ cup water. Cook over medium heat until thickened. Set aside to cool.
Make Cheesecake Filling
  1. Using an electric mixer, beat together 200g cream cheese, 2 tablespoons sugar, and 1 packet vanilla sugar until smooth.
Prepare Dough and Fill Buns
  1. Punch down the risen dough, divide into portions, and flatten them.
  2. Fill with cheesecake and apple filling, then seal the buns.
  3. Arrange seam side down on a baking sheet.
Add Topping and Bake
  1. Mix 1 tablespoon melted butter, 1 tablespoon sugar, and ½ cup flour for a crumbly mixture; scatter over the buns.
  2. Brush each bun with egg yolk for shine.
  3. Bake at 350°F (175°C) for 20-25 minutes, until golden brown.
Make Glaze
  1. Mix 1 cup powdered sugar with 2 tablespoons milk for glaze; drizzle over cooled buns.

Notes

Serve warm with whipped cream or vanilla ice cream. Store leftovers in an airtight container in the fridge for up to 4 days, or freeze for up to a month.
