Method
 

Preparation
  1. In a large pan, heat olive oil over medium heat.
  2. Add onions and garlic, and sauté until translucent.
  3. Add sliced mushrooms and cook until softened.
  4. Stir in paprika and flour, cooking for another minute.
  5. Gradually add vegetable broth, stirring constantly until combined.
  6. Reduce heat and stir in sour cream; simmer for a few minutes.
  7. Season with salt and pepper.
  8. Serve over noodles or rice.

Notes

For a richer flavor, sauté the onions longer and consider using a mix of mushrooms. A splash of white wine can elevate the flavors, and crushed red pepper flakes can be added for spice. For vegan options, replace sour cream with cashew cream or a dairy-free alternative.
