Huli Huli Chicken

Ingredients
  

For the Marinade
  • 1/2 cup soy sauce Low sodium can be used for a healthier option.
  • 1/2 cup brown sugar Packed for better mixing.
  • 1/4 cup ketchup
  • 1/4 cup pineapple juice Freshly squeezed is recommended for the best flavor.
  • 2 cloves garlic, minced
  • 1 teaspoon fresh ginger, grated
  • 1 teaspoon sesame oil
  • 1/4 teaspoon black pepper
For the Chicken
  • 4 pieces boneless, skinless chicken thighs Can substitute with chicken breasts if desired.
  • Green onions for garnish
  • Sesame seeds for garnish

Method
 

Preparation
  1. In a bowl, mix together soy sauce, brown sugar, ketchup, pineapple juice, garlic, ginger, sesame oil, and black pepper to create the marinade.
  2. Place the chicken in a resealable bag or shallow dish, pour the marinade over it, and marinate for at least 1 hour or up to overnight.
  3. Preheat the grill to medium-high heat.
Cooking
  1. Remove chicken from marinade and discard the marinade.
  2. Grill the chicken for 6-7 minutes per side or until fully cooked.
  3. Garnish with green onions and sesame seeds before serving.

Notes

To serve, pair with a tropical salad, on a bed of fluffy rice, or with grilled veggies. Leftovers can be stored in the fridge for 3-4 days or frozen for 3 months.
