Ingredients
  

For the cupcakes
  • 1 cup All-purpose flour
  • 1 teaspoon Baking powder
  • 1/4 teaspoon Salt
  • 1/2 cup Unsalted butter (Softened)
  • 1 cup Granulated sugar
  • 2 large Eggs
  • 1/4 cup Honey
  • 1/2 cup Whole milk
  • 1 teaspoon Vanilla extract
  • 2 cups Fresh peaches (Diced)
For the cream cheese frosting
  • 8 ounces Cream cheese (Softened)
  • 1/4 cup Granulated sugar
  • 1 large Egg yolk
  • 1 teaspoon Vanilla extract
For garnish
  • 1 cup Peach slices For garnish
  • 1 tablespoon Honey drizzle
  • 1/2 cup Crushed graham crackers For topping

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and line a cupcake tin with liners.
  2. In a large bowl, mix the softened butter and sugar until creamy.
  3. Add the eggs, honey, milk, and vanilla extract. Mix until well combined.
  4. Gradually fold in the flour, baking powder, and salt until everything is smooth.
  5. Gently stir in the diced peaches.
  6. Spoon the batter into the cupcake liners, filling each about two-thirds full.
  7. Bake for 18-20 minutes, or until a toothpick comes out clean.
Frosting
  1. While the cupcakes cool, beat the cream cheese, sugar, egg yolk, and vanilla extract in another bowl until fluffy and smooth.
  2. Once the cupcakes are cool, add the cheesecake mixture on top.
Garnishing
  1. Top with peach slices, a drizzle of honey, and a sprinkle of crushed graham crackers.

Notes

Choose ripe, juicy peaches for the best flavor. You can substitute frozen peaches if fresh ones aren't available. Store in an airtight container in the fridge for 3-5 days or freeze for up to three months.
