Preparation
  1. In a bowl, mix honey, soy sauce, cornstarch, and water to create the sauce.
Cooking
  1. Heat oil in a large skillet over medium-high heat.
  2. Add diced chicken and cook until browned and cooked through, about 5-7 minutes.
  3. Add minced garlic and mixed vegetables to the skillet and stir-fry for another 3-4 minutes.
  4. Pour the honey garlic sauce over the chicken and vegetables, stirring to coat.
  5. Cook for an additional 2-3 minutes until the sauce thickens.
  6. Season with salt and pepper to taste.
  7. Serve over steamed rice or noodles.

Notes

Store leftovers in an airtight container in the fridge for 3-4 days. For longer storage, freeze for up to 3 months. Reheat on the stove or microwave until warmed through. Consider adding red pepper flakes or Sriracha for a spicy kick.
