  • 1 lb boneless, skinless chicken thighs Use thighs for juiciness
  • 1 cup long-grain rice This will soak up the flavors
  • 2 cups chicken broth Liquid for cooking the rice
  • 1/2 cup BBQ sauce Sweet and smoky flavor
  • 1/4 cup honey Adds sweetness
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp smoked paprika For extra smoky flavor
  • to taste Salt and pepper
  • 1 cup mixed vegetables Optional for added nutrition
  • Chopped green onions for garnish Freshness and crunch

Method
 

Preparation
  1. Sprinkle the chicken with garlic powder, onion powder, smoked paprika, salt, and pepper.
  2. Heat a skillet over medium heat and sear the chicken for 3–4 minutes per side until golden brown. Remove and set aside.
Cooking
  1. In a bowl, whisk together BBQ sauce, honey, soy sauce, and minced garlic.
  2. In the same pan, toast the uncooked rice for 1–2 minutes.
  3. Pour in chicken broth and half the sauce, stirring to combine.
  4. Return the chicken to the pan and pour the remaining sauce over the top.
  5. Cover and simmer on low heat for 15 minutes.
  6. Add mixed vegetables, cover, and cook for an additional 5 minutes or until the rice is tender and chicken is cooked through.
  7. Let sit for 5 minutes before garnishing with green onions and serving hot.

Notes

For a variation, swap BBQ sauce for teriyaki sauce for an Asian-inspired dish. This meal is great served with coleslaw or cucumber salad.
