Homemade Tomato Basil Soup

Ingredients
  

Main Ingredients
  • 6 cups Fresh tomatoes Use ripe tomatoes for best flavor.
  • 1 cup Basil leaves
  • 1 medium Onion, chopped
  • 3 cloves Garlic, minced Toasted for added flavor.
  • 2 tablespoons Olive oil
  • 4 cups Vegetable broth
  • 1 cup Cream Optional for creaminess.
  • 1 teaspoon Salt Adjust to taste.
  • ½ teaspoon Pepper Adjust to taste.

Method
 

Preparation
  1. Preheat the oven to 400°F (200°C).
  2. Cut tomatoes in half, and place them on a baking sheet with chopped onion and garlic. Drizzle with olive oil and season with salt and pepper.
  3. Roast for about 25-30 minutes.
Cooking
  1. In a pot, combine the roasted tomatoes, basil, and vegetable broth. Bring to a simmer and cook for 10 minutes.
  2. Use an immersion blender to puree the soup until smooth.
  3. Stir in cream to achieve your desired creaminess.
  4. Adjust seasoning, serve hot, and enjoy!

Notes

To serve, drizzle a bit of olive oil on top and sprinkle some fresh basil. Pair with crusty bread or grilled cheese for the perfect meal. Store leftovers in the fridge for up to 3 days or freeze for up to 3 months.
