Ingredients
  

Brownie Batter
  • 1/2 cup unsalted butter, melted Make sure it’s cooled slightly before mixing.
  • 1 cup granulated sugar
  • 2 large eggs Room temperature preferred.
  • 1 teaspoon vanilla extract
  • 1/2 cup all-purpose flour Consider reducing for a gooier texture.
  • 1/3 cup unsweetened cocoa powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon baking powder
  • 1/2 cup mini chocolate chips Feel free to swap with peanut butter chips.
Toppings
  • 1/2 cup chocolate frosting Store-bought or homemade.
  • Rainbow sprinkles For decoration.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease a 9×9 inch baking pan.
  2. In a medium bowl, mix melted butter and sugar until combined.
  3. Add in the eggs and vanilla extract; mix until smooth.
  4. In another bowl, combine flour, cocoa powder, salt, and baking powder. Gradually add this to the wet ingredients until just combined.
  5. Fold in mini chocolate chips.
Baking
  1. Spread the batter evenly in the prepared baking pan.
  2. Bake for 20-25 minutes or until a toothpick comes out with a few moist crumbs.
  3. Allow brownies to cool completely.
Finishing Touches
  1. Once cooled, spread chocolate frosting on top and sprinkle with rainbow sprinkles.

Notes

Store brownies in the fridge for up to one week or freeze for up to three months. Reheat in the microwave for 10-15 seconds.
