Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a skillet, brown the ground beef with the chopped onion until fully cooked. Drain any excess fat.
  3. In a greased baking dish, layer the sliced potatoes.
  4. Spread the beef mixture over the potatoes.
  5. In a bowl, mix the cream of mushroom soup with salt, pepper, and any optional herbs or spices. Pour this mixture over the layered beef and potatoes.
  6. Top with shredded cheese.
Baking
  1. Cover the dish with aluminum foil and bake for about 45 minutes.
  2. Remove the foil and bake for an additional 15 minutes, or until the potatoes are tender and the cheese is bubbly.
  3. Let cool slightly before serving.

Notes

Store leftovers in the fridge for up to 3-4 days in an airtight container. Freeze for up to 3 months and reheat individual portions as needed. Cook potatoes just enough to hold up during baking, experiment with toppings and mix in veggies for added nutrition.
