  • 2 cups cooked chicken, shredded
  • 1 cup Greek yogurt Can be substituted with avocado for a creamier texture.
  • 1 cup black beans, rinsed and drained Can be swapped for chickpeas for added fiber.
  • 1 cup fire-roasted corn Fresh corn can be used instead.
  • 1 piece bell pepper, chopped
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • to taste Salt
  • to taste Pepper
  • to taste Lime juice Squeeze over to taste.

Method
 

Preparation
  1. In a large bowl, combine the shredded chicken, Greek yogurt, black beans, fire-roasted corn, and chopped bell pepper.
  2. Sprinkle with chili powder, cumin, salt, and pepper.
  3. Squeeze lime juice over the mixture and stir until well combined.
  4. Serve immediately or store in the fridge for meal prep.

Notes

This salad can be served in lettuce wraps or on a bed of greens. It can be stored in the fridge for 3-4 days. Avoid freezing.
