  • 1 low-carb tortilla 1 low-carb tortilla
  • 1/4 cup 1/4 cup Greek yogurt Use plain or flavored Greek yogurt.
  • 1 wedge 1 Laughing Cow cheese wedge Any cheese wedge will do.
  • 1 cup 1 cup cooked chicken, shredded Use rotisserie chicken for convenience.
  • 1/4 cup 1/4 cup ranch seasoning
  • to taste oil Oil for cooking (optional) Use olive oil or any preferred cooking oil.

Method

  1. Heat a non-stick skillet over medium heat and add a little oil if desired.
  2. Spread the Greek yogurt and ranch seasoning on one side of the tortilla.
  3. Place the shredded chicken on top of the yogurt mixture, followed by the Laughing Cow cheese.
  4. Fold the tortilla in half to form a quesadilla.
  5. Cook in the skillet for about 3-4 minutes on each side, or until golden brown and the cheese has melted.
  6. Slice into wedges and serve immediately.

Notes

For an enhanced experience, serve with crunchy veggies or a fresh garden salad. Leftovers can be refrigerated for up to 3 days. Freeze for longer storage; reheat in a skillet or oven.
