- Heat a non-stick skillet over medium heat and add a little oil if desired.
- Spread the Greek yogurt and ranch seasoning on one side of the tortilla.
- Place the shredded chicken on top of the yogurt mixture, followed by the Laughing Cow cheese.
- Fold the tortilla in half to form a quesadilla.
- Cook in the skillet for about 3-4 minutes on each side, or until golden brown and the cheese has melted.
- Slice into wedges and serve immediately.
Notes
For an enhanced experience, serve with crunchy veggies or a fresh garden salad. Leftovers can be refrigerated for up to 3 days. Freeze for longer storage; reheat in a skillet or oven.
