Healthy Strawberry Oatmeal Bars

Ingredients
  

Dry Ingredients
  • 2 cups rolled oats Can use quick oats for faster preparation.
  • 1 cup almond flour Use gluten-free flour for gluten-free bars.
  • 1/2 teaspoon salt Enhances the flavor of the bars.
Wet Ingredients
  • 1/3 cup maple syrup Can substitute with honey or agave.
  • 1/4 cup coconut oil (melted) Can substitute with applesauce for a vegan option.
  • 1 teaspoon vanilla extract Adds a lovely flavor.
Strawberry Filling
  • 2 cups fresh or frozen strawberries (chopped) Fresh strawberries are preferred for best taste.
  • 1 tablespoon cornstarch Helps thicken the strawberry filling.
  • 1 tablespoon lemon juice Brightens the flavor of the strawberries.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and line an 8x8 inch baking pan with parchment paper.
  2. In a bowl, mix together the rolled oats, almond flour, maple syrup, melted coconut oil, vanilla extract, and salt until well combined.
  3. Press half of the oatmeal mixture into the bottom of the prepared baking pan.
  4. In another bowl, combine the strawberries with cornstarch and lemon juice, then spread the strawberry mixture over the oatmeal layer in the pan.
  5. Crumble the remaining oatmeal mixture on top of the strawberries.
Baking
  1. Bake for about 25-30 minutes, or until golden brown.
  2. Allow to cool completely before cutting into bars.

Notes

For a fancier touch, serve with a drizzle of maple syrup or a dollop of Greek yogurt. Store in the fridge for up to a week or freeze for longer storage.
