Preparation
- Preheat the oven to 375°F (190°C).
- In a skillet, heat olive oil over medium heat and sauté the onions until translucent.
- Add spinach and cook until wilted.
- In a bowl, whisk together the eggs, milk, salt, pepper, and nutmeg.
- Lay the pie crust in a pie dish and add the cooked spinach and onions.
- Sprinkle the feta cheese on top.
- Pour the egg mixture over the filling.
Baking
- Bake for 35-40 minutes or until the quiche is set and the top is golden.
- Allow to cool for a few minutes before slicing and serving.
Notes
Slice and serve warm with a simple side salad. Quiche can be stored in the fridge for 3-4 days or frozen for up to 2 months. Reheat as needed.
