Ingredients
  

For the Quiche
  • 1 pie crust 1 pie crust
  • 1 cup 1 cup fresh spinach, chopped Fresh, chopped spinach
  • 1 cup 1 cup feta cheese, crumbled Crumbled feta cheese

  • 1 cup 1 cup milk
  • 1/2 teaspoon 1/2 teaspoon salt
  • 1/4 teaspoon 1/4 teaspoon black pepper
  • 1/4 teaspoon 1/4 teaspoon nutmeg (optional) Optional for added flavor
  • 1/2 cup 1/2 cup onion, diced Diced onion
  • 1 tablespoon 1 tablespoon olive oil For sautéing

Method
 

Preparation
  1. Preheat the oven to 375°F (190°C).
  2. In a skillet, heat olive oil over medium heat and sauté the onions until translucent.
  3. Add spinach and cook until wilted.
  4. In a bowl, whisk together the eggs, milk, salt, pepper, and nutmeg.
  5. Lay the pie crust in a pie dish and add the cooked spinach and onions.
  6. Sprinkle the feta cheese on top.
  7. Pour the egg mixture over the filling.
Baking
  1. Bake for 35-40 minutes or until the quiche is set and the top is golden.
  2. Allow to cool for a few minutes before slicing and serving.

Notes

Slice and serve warm with a simple side salad. Quiche can be stored in the fridge for 3-4 days or frozen for up to 2 months. Reheat as needed.
