  • 1/4 cup honey or maple syrup You can also substitute with coconut sugar.
  • 2 pieces eggs Can use flax eggs for a vegan option.
  • 1/2 teaspoon vanilla extract
Dry Ingredients
  • 1/2 cup almond flour
  • 1/4 cup tapioca flour
  • 1/2 cup cocoa powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C) and line a loaf pan with parchment paper.
  2. In a large bowl, mash the ripe bananas until smooth.
  3. Add the eggs, honey (or maple syrup), and vanilla extract; mix well.
  4. In another bowl, whisk together the almond flour, tapioca flour, cocoa powder, baking soda, and salt.
  5. Gradually add the dry ingredients to the banana mixture; stir until just combined.
  6. Pour the batter into the prepared loaf pan and smooth the top.
Baking
  1. Bake for 45-50 minutes or until a toothpick inserted comes out clean.
  2. Let it cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
