  • 4 medium zucchinis Cut in half lengthwise
  • 1 pound ground beef
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon Italian herbs
  • Salt and pepper to taste
  • 1 cup marinara sauce
  • 1 cup shredded cheese Mozzarella or cheddar

Method
 

Preparation
  1. Preheat the oven to 375°F (190°C).
  2. Cut the zucchinis in half lengthwise and scoop out the insides to form boats.
Cooking
  1. In a skillet, brown the ground beef over medium heat.
  2. Add the chopped onion and minced garlic, cooking until onions are translucent.
  3. Stir in Italian herbs, salt, pepper, and marinara sauce.
  4. Fill each zucchini boat with the ground beef mixture.
  5. Top with shredded cheese.
  6. Place the boats in a baking dish and bake for 25-30 minutes until the zucchini is tender and the cheese is bubbly.

Notes

Don’t overcook the zucchini: it should be tender but still hold its shape. Feel free to add chopped bell peppers or mushrooms to the beef mixture for extra nutrition.
