Ingredients
  

For the Bowl
  • 1 pound ground beef
  • 2 medium sweet potatoes, diced
  • 1 can corn, drained (15 oz)
  • 1 tablespoon olive oil
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon garlic powder
  • to taste Salt and pepper
  • Fresh cilantro for garnish
  • Lime wedges for serving

Method
 

Preparation
  1. Preheat the oven to 400°F (200°C).
  2. Toss the diced sweet potatoes with olive oil, salt, and pepper, then spread them out on a baking sheet. Roast for about 25-30 minutes until tender.
  3. In a skillet over medium heat, cook the ground beef until browned. Drain excess fat.
  4. Stir in chili powder, cumin, garlic powder, salt, and pepper. Cook for an additional 2-3 minutes.
  5. In a separate pan, heat the corn until warmed through.
  6. Assemble the bowls by placing a portion of roasted sweet potatoes, seasoned ground beef, and warm corn.
  7. Garnish with fresh cilantro and serve with lime wedges.

Notes

Store leftovers in an airtight container for 3-4 days in the fridge. This dish can also be frozen for up to 3 months.
