  • 2 medium sweet potatoes, cubed You can peel them or leave the skin on.
  • 2 tablespoons olive oil For roasting the sweet potatoes.

  • to taste Hot honey Start small and adjust for your heat preference.
  • to taste Fresh herbs (like parsley or cilantro, for garnish) Adds freshness to the dish.

Preparation
  1. Preheat the oven to 425°F (220°C).
  2. Toss the cubed sweet potatoes with olive oil, salt, and pepper. Spread them on a baking sheet and roast for about 25-30 minutes or until tender.
Cooking
  1. In a skillet over medium heat, cook the ground beef until browned, breaking it apart with a spatula.
  2. Once the beef is cooked, drizzle hot honey over it and stir to combine.
Serving
  1. To serve, place roasted sweet potatoes in a bowl, add the hot honey beef mixture on top, and garnish with fresh herbs.

Notes

For a creamy finish, add a dollop of sour cream or Greek yogurt. Leftovers can be stored in an airtight container in the fridge for 3-4 days or frozen for up to 3 months. When reheating, warm on the stove or microwave until heated through.
