Ingredients
  

Main Ingredients
  • 1 lb ground beef
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 15 oz can enchilada sauce
  • 2 cups shredded cheese (cheddar or Mexican blend)
  • 8 pieces corn or flour tortillas
  • to taste Salt
  • to taste Pepper
Optional Toppings
  • sour cream for serving
  • chopped cilantro for serving
  • sliced olives for serving

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. In a skillet, cook the chopped onion and minced garlic over medium heat until softened.
  3. Add the ground beef to the skillet, cooking until browned. Season with salt and pepper.
  4. Stir in half of the enchilada sauce and allow to simmer for a few minutes.
  5. In each tortilla, place a spoonful of the beef mixture and sprinkle some cheese. Roll the tortillas and place them seam side down in a baking dish.
  6. Pour the remaining enchilada sauce over the top of the rolled tortillas and sprinkle with the remaining cheese.
  7. Bake for 20-25 minutes or until the cheese is bubbly and golden.
  8. Serve hot with optional toppings.

Notes

Store leftovers in an airtight container in the fridge for up to 3-4 days. You can also freeze them for up to 3 months. To reheat, bake in the oven at 350°F (175°C) until warmed through.
