  • 2 medium sweet potatoes, diced
  • 1 unit onion, chopped
  • 2 cloves garlic, minced
  • 1 unit bell pepper, chopped
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Olive oil For cooking
  • Fresh parsley for garnish Chopped, for serving

Method
 

Preparation
  1. In a large skillet, heat a drizzle of olive oil over medium heat.
  2. Add the chopped onion and bell pepper, cooking until softened.
  3. Stir in the garlic and cook for another minute.
  4. Push the veggies to one side and add the ground beef, cooking until browned.
  5. Mix in the diced sweet potatoes and paprika.
  6. Season with salt and pepper, cover, and cook for about 15 minutes until the sweet potatoes are tender, stirring occasionally.
  7. Once done, garnish with fresh parsley and serve.

Notes

Leftovers can be stored in an airtight container in the fridge for about 3-4 days. It freezes well for 2-3 months; reheat with a splash of water if needed. Adding extra vegetables like kale or spinach can boost nutrition.
