Fritter Ingredients
  • 2 cups Fresh tomatoes, grated Choose ripe tomatoes for best flavor.
  • 1/2 cup Chopped herbs (parsley and basil) Feel free to mix your favorite herbs.
  • 1 cup Crumbled feta cheese Can substitute with goat cheese or mozzarella.
  • 1 cup Flour For a lighter fritter, consider replacing half with breadcrumbs.
  • 1 teaspoon Baking powder Helps in making the fritters fluffy.
  • 1 teaspoon Salt Enhances flavor.
  • 1/2 teaspoon Pepper Adjust to taste.
  • 1/2 cup Olive oil for frying Can be replaced with other frying oils.

Method
 

Preparation
  1. Grate the fresh tomatoes and place them in a mixing bowl.
  2. Add finely chopped herbs, crumbled feta cheese, flour, baking powder, salt, and pepper to the bowl.
  3. Mix until the ingredients are well combined to form a batter.
Cooking
  1. Heat olive oil in a frying pan over medium heat.
  2. Drop spoonfuls of the batter into the hot oil and fry until golden brown on both sides.
  3. Remove the fritters from the pan and place them on paper towels to drain excess oil.
Serving
  1. Serve warm as an appetizer or snack.

Notes

Store leftovers in an airtight container in the fridge for 3-4 days or freeze for up to a month. Reheat in the oven or air fryer for best results.
