Ingredients
  

For the Cassolette
  • 400 g mixed seafood (shrimp, scallops, and fish) Feel free to switch up the seafood based on availability.
  • 2 tablespoons olive oil
  • 1 cup heavy cream Coconut cream can be used for a vegan version.
  • 1 cup fish or seafood stock
  • 1 tablespoon lemon juice
  • 1 teaspoon paprika
  • 1 Salt and pepper to taste
For the Topping
  • 1 cup grated cheese (such as Gruyere or Parmesan) Mozzarella can be used for an extra gooey vibe.
  • 1 cup breadcrumbs Toast in a pan for added crunch.
  • Fresh parsley for garnish

Method
 

Preparation
  1. Preheat your oven to 180°C (350°F).
  2. In a large skillet, heat the olive oil over medium heat. Add the chopped onion and minced garlic; sauté until softened.
  3. Add the mixed seafood to the skillet and cook until just opaque, about 3-4 minutes.
  4. Stir in the heavy cream, seafood stock, lemon juice, paprika, salt, and pepper. Bring to a gentle simmer.
  5. Transfer the seafood mixture to a cassolette dish or individual ramekins.
  6. Sprinkle grated cheese and breadcrumbs on top.
  7. Bake in the preheated oven for 20-25 minutes, or until the top is golden and crispy.
  8. Garnish with fresh parsley before serving.

Notes

This cassolette can be stored in the refrigerator for about 3 days or frozen for up to a month. Reheat in the oven until warmed through.
