Ingredients
  

Potato Wedges
  • 4 large large potatoes Russets or Yukon Golds work best for texture.
Seasoning Mixture
  • 1/4 cup olive oil Use extra virgin for richer flavor.
  • 2 teaspoons garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
Toppings
  • 1/2 cup grated Parmesan cheese Can substitute with Pecorino Romano or vegan cheese.
  • 2 tablespoons chopped fresh parsley Optional garnish.

Method
 

Preparation
  1. Preheat your oven to 425°F (220°C).
  2. Wash and cut the potatoes into wedges.
Mixing
  1. In a large bowl, combine the olive oil, garlic powder, onion powder, paprika, salt, and black pepper.
  2. Add the potato wedges to the bowl and toss to coat them evenly with the oil and seasonings.
Baking
  1. Spread the seasoned potato wedges in a single layer on a baking sheet.
  2. Bake for 25-30 minutes or until golden and crispy, flipping halfway through.
  3. Remove from the oven and sprinkle with grated Parmesan cheese.
  4. Return to the oven for another 5 minutes to melt the cheese.
Serving
  1. Garnish with chopped parsley if desired and serve hot.

Notes

Store leftovers in an airtight container for 3-4 days in the fridge, or freeze for up to a month.
