Ingredients
  

For the chicken
  • 4 pieces boneless chicken breasts Ensure even cooking by using breasts of uniform thickness.
  • 2 tablespoons olive oil For searing the chicken.
  • 4 cloves garlic, minced Adds a robust flavor.
  • 1 tablespoon dried herbs (thyme, rosemary, oregano) Feel free to use fresh herbs or leftover ones.
  • to taste salt and pepper For seasoning.
For the mashed potatoes
  • 4 large potatoes, peeled and cubed
  • 1/2 cup milk Use plant-based milk for a vegan option.
  • 4 tablespoons butter Use plant-based butter for a vegan option.
For the glazed carrots
  • 4-5 carrots, sliced
  • 2 tablespoons brown sugar For glazing the carrots.

Method
 

Preparation and Cooking
  1. Preheat oven to 400°F (200°C).
  2. In a skillet, heat olive oil over medium heat. Add garlic and dried herbs, cooking until fragrant.
  3. Season chicken with salt and pepper, then add to skillet, searing for 5 minutes on each side.
  4. Transfer the chicken to a baking dish and bake for 20-25 minutes or until fully cooked.
  5. Meanwhile, boil potatoes in a pot of salted water until tender. Drain and mash with milk and butter until creamy.
  6. In another pot, boil sliced carrots until tender. Drain and toss with brown sugar until glazed.
  7. Serve chicken alongside mashed potatoes and glazed carrots.

Notes

Store leftovers in airtight containers in the fridge for up to 3-4 days or freeze for up to 3 months. You can prep everything the night before and bake it before serving. For added texture in mashed potatoes, try adding sour cream or cream cheese.
