Ingredients
  

Egg Filling
  • 6 pieces hard-boiled eggs boiled for 9-12 minutes
  • 1/4 cup mayonnaise or Greek yogurt for a lighter option
  • 1 teaspoon Dijon mustard
  • Salt and pepper to taste
  • 1/4 teaspoon paprika
Coating and Frying
  • 1 cup breadcrumbs panko for extra crunch if desired
  • Oil for frying

Method
 

Preparation
  1. Slice the hard-boiled eggs in half and remove the yolks.
  2. In a bowl, mash the yolks with mayonnaise, Dijon mustard, salt, pepper, and paprika until smooth.
  3. Spoon or pipe the yolk mixture back into the egg whites.
  4. Dip each filled egg into breadcrumbs to coat.
Cooking
  1. In a skillet, heat oil over medium heat.
  2. Fry the coated eggs until golden brown on both sides, about 2-3 minutes.
  3. Remove from the skillet and drain on paper towels.
Serving
  1. Serve warm and enjoy! Consider adding fresh herbs or a zesty dipping sauce.

Notes

These fried deviled eggs are best enjoyed fresh but can be stored in the fridge for up to 3 days. Keep filling and egg whites prepared separately for best results. Frying a test egg will ensure your oil is at the right temperature.
