- Slice the hard-boiled eggs in half and remove the yolks.
- In a bowl, mash the yolks with mayonnaise, Dijon mustard, salt, pepper, and paprika until smooth.
- Spoon or pipe the yolk mixture back into the egg whites.
- Dip each filled egg into breadcrumbs to coat.
Cooking
- In a skillet, heat oil over medium heat.
- Fry the coated eggs until golden brown on both sides, about 2-3 minutes.
- Remove from the skillet and drain on paper towels.

- Serve warm and enjoy! Consider adding fresh herbs or a zesty dipping sauce.
Notes
These fried deviled eggs are best enjoyed fresh but can be stored in the fridge for up to 3 days. Keep filling and egg whites prepared separately for best results. Frying a test egg will ensure your oil is at the right temperature.
