Ingredients
  

Pasta Salad Ingredients
  • 8 oz pasta (like rotini or penne) Cook pasta al dente.
  • 1 can black beans, rinsed and drained
  • 1 can corn, drained
  • 1 large red bell pepper, diced
  • 1 large green bell pepper, diced
  • 1/4 medium red onion, diced
  • 1 cup cherry tomatoes, halved
  • 1 medium avocado, diced Optional for a vegan version.
  • 1/4 cup cilantro, chopped Can be substituted with parsley.
Dressing
  • 1/4 cup lime juice Freshly squeezed is best.
  • 2 tablespoons olive oil
  • to taste salt and pepper

Method
 

Preparation
  1. Cook the pasta according to package instructions. Drain and cool.
  2. In a large bowl, combine the cooked pasta, black beans, corn, bell peppers, red onion, cherry tomatoes, avocado, and cilantro.
Dressing
  1. In a small bowl, whisk together lime juice, olive oil, salt, and pepper.
  2. Pour the dressing over the pasta salad and toss gently to combine.
Serving
  1. Serve immediately or chill in the refrigerator for an hour before serving.

Notes

This salad keeps well in the fridge for about 3-5 days in an airtight container. It tastes even better after sitting in the fridge to let the flavors deepen.
