Ingredients
  

Cake Ingredients
  • 1 cup all-purpose flour
  • 1 cup sugar
  • 1/2 cup unsalted butter, softened Use room temperature for best results.
  • 3 large eggs Room temperature.
  • 1/2 cup milk
  • 1/2 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
Filling and Topping
  • 2 cups fresh strawberries, hulled and sliced Can substitute with frozen if thawed and drained.
  • 2 cups heavy whipping cream Whip until stiff peaks form.
  • 2 tablespoons powdered sugar For sweetening the whipped cream.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C). Grease and flour a cake pan.
  2. In a bowl, cream together the butter and sugar until fluffy.
  3. Add eggs one at a time, mixing well after each addition.
  4. Stir in the milk and vanilla extract.
  5. In another bowl, combine the flour, baking powder, and salt.
  6. Gradually add this to the butter mixture until just combined.
  7. Pour the batter into the prepared pan and smooth the top.
Baking
  1. Bake for 25-30 minutes or until a toothpick comes out clean.
  2. Allow to cool completely on a wire rack.
Assembly
  1. Whip the heavy cream with powdered sugar until stiff peaks form.
  2. Once the cake cools, slice it in half horizontally.
  3. Spread whipped cream on the bottom layer, add sliced strawberries, then place the top layer back on.
  4. Frost the top with remaining whipped cream and decorate with more strawberries.
  5. Chill before serving and enjoy!

Notes

Store leftovers in the fridge for up to 3 days. Can freeze individual slices for up to a month. Allow to thaw in the fridge overnight.
