Preparation
- Preheat your oven to 350°F (175°C) and grease a 9x13 inch baking dish.
- In a medium saucepan, melt the butter over low heat.
- Stir in sugar until combined.
- Remove from heat and add the eggs, one at a time, stirring well after each addition.
- Mix in vanilla extract, flour, cocoa powder, and salt until well combined.
- Pour the batter into the prepared baking dish.
- Bake for 25-30 minutes until a toothpick inserted comes out with a few moist crumbs.
- Let brownies cool completely.
Mousse Preparation
- In a mixing bowl, beat the heavy cream until stiff peaks form.
- Melt the chopped chocolate and let it cool slightly, then fold into the whipped cream.
- Spread the chocolate mousse over the cooled brownies.
Serving
- Top with whipped cream and chocolate shavings before serving.
Notes
Store leftovers in an airtight container in the fridge for up to a week. They freeze beautifully for up to three months, just thaw overnight in the fridge before indulging again. For a thicker mousse layer, increase the chocolate slightly.
