Method
 

Preparation
  1. Boil the potatoes in salted water until tender. Drain and let cool slightly.
  2. While the potatoes are still warm, cut them into halves or quarters.
Mixing
  1. In a large bowl, whisk together the olive oil, Dijon mustard, salt, and pepper.
  2. Add the warm potatoes to the bowl and toss to coat.
  3. Stir in the fresh herbs.

Notes
