  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
Wet Ingredients

  • 1 large egg Substitute with flax egg for vegan option
  • 2 tablespoons melted butter
Toppings
  • as many as you'd like strawberries Fresh, for serving
  • as many as you'd like blueberries Fresh, for serving
  • to taste whipped cream For serving

Method
 

Preparation
  1. In a bowl, mix together flour, sugar, baking powder, and salt.
  2. In another bowl, whisk together milk, egg, and melted butter until smooth.
  3. Combine wet and dry ingredients and stir until just mixed; lumpy is good!
Cooking
  1. Heat a non-stick skillet over medium heat and pour batter to form pancakes.
  2. Cook until bubbles form on the surface, then flip and cook until golden brown.
Serving
  1. To decorate, stack pancakes high, using whipped cream for a bunny tail, strawberries for feet, and blueberries for eyes.
  2. Serve warm and enjoy!

Notes

Use room temperature ingredients for best results. For added flavor, consider adding a teaspoon of vanilla extract. Don't overmix the batter; lumps promote fluffiness.
