  • 1 cup egg whites (about 8 large eggs) Room temperature for better whipping
  • 1 teaspoon cream of tartar
  • 1 cup granulated sugar
  • 1 cup cake flour Sifted for lightness
  • 1/2 teaspoon salt Sifted with cake flour
  • 1/4 cup key lime juice
  • 1 tablespoon grated key lime zest
  • 1 teaspoon vanilla extract

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. In a large mixing bowl, beat the egg whites and cream of tartar until soft peaks form.
  3. Gradually add the sugar, continuing to beat until stiff peaks form.
  4. Sift the cake flour and salt together; gently fold into the egg mixture.
  5. Stir in the lime juice, lime zest, and vanilla extract until just combined.
  6. Pour the batter into an ungreased angel food cake pan.
  7. Bake for 30-35 minutes or until the top is golden brown and springs back when touched.
  8. Invert the pan onto a bottle or cooling rack and let it cool completely before removing from the pan.
Serving
  1. Serve with whipped cream and additional lime zest if desired.

Notes

Store in the fridge for about 3-4 days or freeze for up to 3 months. Room temperature egg whites whip better, and sifting the flour twice helps avoid lumps.
