Ingredients
  

Main Ingredients
  • 1 lb Flank steak
  • 1 cup Rice Cook according to package instructions.
  • 1 can Black beans Heated together with corn.
  • 1 cup Corn Heated together with black beans.
  • 2 cups Fresh veggies (bell peppers, onions, tomatoes) Chopped.
  • 1 cup Feta cheese Optional topping.
  • 2 tbsp Olive oil
  • 2 tbsp Lime juice
  • 1 tsp Salt Adjust to taste.
  • 1 tsp Pepper Adjust to taste.

Method
 

Preparation
  1. Marinate the flank steak in olive oil, lime juice, salt, and pepper for at least 30 minutes.
  2. While the steak is marinating, chop the fresh veggies.
Cooking
  1. Grill the marinated flank steak to your desired doneness, about 5-7 minutes per side for medium.
  2. While the steak is grilling, cook the rice according to package instructions.
  3. Prepare the black beans and corn by heating them together in a small pot.
  4. Once the flank steak is done, let it rest before slicing into thin strips.
Assembly
  1. In bowls, layer the rice, black beans, corn, fresh veggies, and sliced flank steak.
  2. Top with crumbled feta cheese if desired.

Notes

Leftovers can be stored in an airtight container in the fridge for 3-4 days. For freezing, pack the ingredients separately.
