Ingredients
  

For the stuffed jalapeños
  • 8 oz cream cheese, softened Make sure it's softened for easy mixing.
  • 1/2 cup shredded cheddar cheese
  • 1/2 cup cooked shrimp, finely chopped Frozen shrimp can be used, just ensure it's thawed.
  • 1 tsp Cajun seasoning Adjust spice level according to preference.
  • 1/2 tsp garlic powder
  • 1/4 tsp smoked paprika
  • 1/4 tsp salt Adjust to taste.
  • 1/4 cup breadcrumbs Optional, for added crunch.
  • 2 tbsp melted butter Optional, to mix with breadcrumbs.
  • 12 large jalapeños, halved and seeds removed Remove seeds for less heat.
  • to garnish Fresh parsley or green onions

Method
 

Preparation
  1. Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. In a bowl, combine the cream cheese, cheddar cheese, chopped shrimp, Cajun seasoning, garlic powder, smoked paprika, and salt. Mix until smooth.
  3. Fill the jalapeño halves with the mixture, smoothing the tops.
  4. If desired, mix the breadcrumbs with melted butter and sprinkle on top of the stuffed jalapeños.
Baking
  1. Bake for 15-20 minutes or until bubbly and golden.
Serving
  1. Garnish with fresh parsley or green onions and serve warm.

Notes

Store leftovers in an airtight container in the fridge for 3-5 days. To reheat, bake at 350°F for about 10 minutes.
