  • 1 onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 4 cups vegetable broth
  • 2 cups mixed vegetables (e.g., zucchini, bell peppers, green beans) Feel free to use any fresh or frozen veggies.
  • 1 can (14.5 oz) diced tomatoes
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano

Method
 

Cooking Instructions
  1. In a large pot, heat olive oil over medium heat.
  2. Add chopped onion, carrots, and celery; sauté until softened, about 5-7 minutes.
  3. Stir in garlic and cook for another minute.
  4. Pour in the vegetable broth and add mixed vegetables, diced tomatoes, thyme, and oregano.
  5. Bring to a boil, then reduce heat and let it simmer for 20-30 minutes.
  6. Season with salt and pepper to taste.
  7. Serve hot, garnished with fresh parsley.

Notes

This soup keeps well in the fridge for about 3-4 days and can be frozen for up to 3 months. When reheating, add a splash of broth to revive its fresh flavor. For added texture, consider tossing in cooked quinoa or pasta.
