  • 4 cups fresh peaches, sliced Fresh is best, but frozen can be used if thawed and drained.
  • 1 cup sugar Adjust according to the sweetness of the peaches.
  • 2 tablespoons lemon juice Adds brightness to the flavor.
  • 1 teaspoon cinnamon Optional spices can include nutmeg or cardamom.
  • 1 tablespoon cornstarch Thickens the peach filling.
Crust
  • 1 package refrigerated pie crusts Or homemade pie crust.
  • 1/4 cup butter, melted For drizzling on the top crust.
  • 1/4 cup brown sugar Sprinkled on top for added sweetness.
  • 1 egg beaten For egg wash to achieve golden crust.

Method
 

Preparation
  1. Preheat your oven to 425°F (220°C).
  2. In a large bowl, combine sliced peaches with sugar, lemon juice, cinnamon, and cornstarch. Let it sit for about 10 minutes.
  3. Roll out one pie crust and place it in a 9×13 inch baking dish. Pour the peach mixture into the crust.
  4. Roll out the second pie crust and place it over the peach filling, cutting slits in the top crust to allow steam to escape.
  5. Drizzle melted butter over the top crust and sprinkle with brown sugar.
  6. Brush the edges with beaten egg for a golden finish.
Baking
  1. Bake for 30-35 minutes, or until the crust is golden brown.
  2. Let it cool slightly before serving.

Notes

Serve warm with a scoop of vanilla ice cream or whipped cream. Store leftovers covered in the fridge for 3-4 days, or freeze for up to 3 months.
