  • 1 tbsp coconut oil
  • 3 pieces chicken breasts sliced in half
  • 1 tsp salt
  • 1 tsp pepper
  • 1 tsp chili powder adjust to taste
  • 3 cloves garlic minced
  • 1 tbsp minced ginger
  • 1 piece red bell pepper sliced
  • 3 tbsp Thai red curry paste heaping
  • 1 tsp brown sugar
  • 1 can (400ml) coconut milk
  • 3 pieces bok choy
  • a pinch red pepper flakes adjust to taste
  • 1 piece lime juiced
  • a handful cilantro for garnish
  • as needed rice for serving

Method
 

Preparation
  1. If you’re serving with rice, start cooking it according to package instructions.
  2. Prep your chicken by slicing the breasts in half and seasoning with salt, pepper, and chili powder.
Cooking
  1. In a pan on medium heat, add coconut oil and cook the chicken until golden and cooked through. Set aside.
  2. Mince garlic and ginger, and slice the red bell pepper.
  3. In the same pan, add garlic, ginger, and red pepper; sauté until softened.
  4. Add red curry paste and brown sugar; cook for 1-2 minutes.
  5. Stir in coconut milk and bring to a simmer.
  6. Add bok choy and cook until softened.
  7. Season with salt, pepper, red pepper flakes, and lime juice.
  8. Serve with rice, sliced chicken, and garnish with cilantro.

Notes

Use fresh ingredients for better flavor and feel free to add more veggies like snap peas or carrots. Substitute chicken with tofu or make a vegan version by using chickpeas or mushrooms.
