Easy Strawberry Zucchini Bread

Ingredients
  

Dry Ingredients
  • 2 cups all-purpose flour
  • 1.5 teaspoons baking powder
  • 0.5 teaspoon baking soda
  • 0.5 teaspoon kosher salt
Wet Ingredients
  • 0.5 cup vegetable oil
  • 0.75 cup buttermilk You can substitute with Greek yogurt.
  • 1 large egg
  • 2 teaspoons vanilla extract
  • 0.75 cup granulated sugar
  • 0.33 cup packed light brown sugar
Fruits and Vegetables
  • 1 cup grated zucchini Grate on the large holes of a box grater.
  • 1 cup chopped fresh strawberries Toss in 1 tablespoon of flour to prevent sinking.

Method
 

Preparation
  1. Preheat the oven to 350°F.
  2. Grate the zucchini and set aside.
  3. Dice the strawberries and set aside.
  4. In a large mixing bowl, add the flour, baking powder, baking soda, and salt. Stir to combine.
  5. In a separate bowl, whisk together the vegetable oil, buttermilk, egg, and vanilla extract for 1-2 minutes.
  6. Add the granulated sugar and brown sugar to the wet mixture and whisk until smooth.
  7. Pour the wet mixture into the dry mixture and stir until fully combined.
  8. Fold in the diced strawberries and grated zucchini gently.
  9. Line an 8x4 loaf pan with parchment paper and pour the batter into the pan.
  10. Bake for 55-60 minutes, until a toothpick inserted comes out clean.
  11. Allow to cool in the pan for about 5-10 minutes, then transfer to a cooling rack.

Notes

Store in an airtight container for 3-4 days or refrigerate for up to a week. Microwave for 10-15 seconds to enjoy warm.
