  • 1 cup red kidney beans Soak overnight
  • 1 pound andouille sausage, sliced
  • 1 large onion, chopped
  • 1 large green bell pepper, chopped
  • 2 stalks celery, chopped
  • 3 cloves garlic, minced Toast for extra flavor
  • 1 tablespoon Cajun seasoning
  • 4 cups chicken or vegetable broth
  • 2 cups white rice Cook according to package instructions
  • Salt and pepper to taste

Method
 

Preparation
  1. Rinse and soak the red kidney beans overnight.
  2. In a large pot, sauté the onion, bell pepper, celery, and garlic until softened.
  3. Stir in the andouille sausage and cook until browned.
Cooking
  1. Add the soaked beans, Cajun seasoning, and broth. Bring to a boil.
  2. Reduce heat, cover, and simmer until the beans are tender, about 1-2 hours.
  3. Cook the white rice according to package instructions.
  4. Serve the beans over rice and garnish with chopped green onions.

Notes

Leftovers stay fresh in the fridge for 3-4 days in an airtight container. Can be frozen for up to 3 months. Reheat slowly for best flavor.
