  • 1 cup white vinegar

  • 1 leaf bay leaf Optional

Preparation
  1. In a saucepan, combine the water, vinegar, sugar, and salt. Heat over medium heat until the sugar and salt are dissolved.
  2. Place the sliced carrots in a clean jar. If using, add mustard seeds, peppercorns, and bay leaf.
  3. Pour the hot pickling liquid over the carrots, ensuring they are fully submerged.
  4. Let the carrots cool at room temperature, then cover and refrigerate for at least 24 hours before enjoying.
