Preparation
- Preheat your oven to 350°F (175°C) and lightly grease your loaf pan or line it with parchment paper.
- Grate the zucchini using a box grater and squeeze out the excess moisture with a clean kitchen towel.
- In a large mixing bowl, whisk together vegetable oil, granulated sugar, eggs, and vanilla extract until smooth and slightly pale.
Mixing
- Sprinkle in the all-purpose flour, baking soda, baking powder, salt, cinnamon, and nutmeg (if using). Gently fold until just combined.
- Fold in the squeezed zucchini and optional chopped nuts until evenly distributed.
Baking
- Pour the batter into the prepared loaf pan and level the top with a spatula. Optionally, sprinkle extra nuts or cinnamon on top.
- Bake for 50–60 minutes, checking at 50 minutes by inserting a toothpick into the center; it should come out clean or with a few moist crumbs.
- Remove the bread from the oven and let it cool in the pan for 10 minutes, then transfer to a cooling rack to cool completely before slicing.
Notes
Store at room temperature for about 3 days, wrapped in plastic wrap. Freeze slices individually wrapped for up to 3 months.
