Ingredients
  

Crust
  • 1.5 cups graham cracker crumbs
  • 0.5 cups unsalted butter, melted
Filling
  • 2 cups cream cheese, softened Bring to room temperature for best results.
  • 1 cups granulated sugar
  • 1 teaspoon vanilla extract
  • 3 large eggs Room temperature.
  • 1 cup sour cream Can be substituted with Greek yogurt.
  • 0.25 cups all-purpose flour

Method
 

Preparation
  1. Preheat your oven to 325°F (160°C).
  2. In a medium bowl, combine graham cracker crumbs and melted butter. Press into the bottom of a 9-inch springform pan.
Making the Filling
  1. In a large bowl, beat cream cheese until smooth. Add sugar and vanilla, mixing until combined.
  2. Add eggs one at a time, mixing well after each addition.
  3. Stir in sour cream and flour until just combined.
Baking
  1. Pour the cream cheese mixture over the crust in the springform pan.
  2. Bake for 50-60 minutes, or until the center is set but still slightly jiggly.
  3. Allow to cool, then refrigerate for at least 4 hours before serving.
Serving
  1. Serve with your favorite toppings such as berry compote, candied nuts, or chocolate ganache.

Notes

Keep leftover cheesecake covered in the fridge for about 5 days. It also freezes well for up to 2 months; thaw in the fridge overnight before serving.
