Ingredients
  

Egg Mixture
  • 12 large large eggs
  • 1 cup cottage cheese (full fat or low fat)
  • 1/2 cup milk (any kind)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
Mix-ins
  • 1 cup shredded cheese (cheddar or Monterey Jack)
  • 1/2 cup cooked, crumbled bacon or diced ham
  • 1/4 cup finely chopped spinach (optional)

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and lightly grease a 12-cup muffin tin or silicone molds.
  2. In a large bowl, whisk together the eggs, cottage cheese, milk, salt, and pepper until completely smooth.
  3. Gently stir in the shredded cheese, cooked bacon or ham, and spinach if using, being careful not to overmix.
  4. Pour the egg mixture evenly into the prepared muffin cups, filling each about three-quarters full.
Baking
  1. Bake for 18 to 22 minutes, or until the bites are set in the center and lightly golden.
  2. Let the egg bites cool in the muffin tin for 5 minutes before carefully removing them.
Serving
  1. Serve warm immediately, or cool completely before storing for meal prep.

Notes

These egg bites can last in the fridge for up to 5 days or be frozen for up to a month. For reheating, microwave for a quick minute or enjoy them cold.
