Ingredients
  

Main ingredients
  • 4 cups chicken broth
  • 2 cups cooked, shredded chicken Rotisserie chicken can be used for convenience.
  • 1 can hominy, drained
  • 1 cup green salsa (or tomatillo salsa) Choose mild or spicy depending on preference.
  • 1 onion, chopped
  • 2 cloves garlic, minced Toasting the garlic enhances the flavor.
Spices and seasoning
  • 1 teaspoon cumin
  • 1 teaspoon oregano
  • Salt and pepper to taste
For serving
  • Lime wedges For drizzling over the served soup.
  • Chopped cilantro For garnish.
  • Radishes, sliced For garnish.

Method
 

Preparation
  1. In a large pot, heat a little oil and sauté the onion and garlic until soft and fragrant.
  2. Add in the shredded chicken, chicken broth, hominy, green salsa, cumin, oregano, salt, and pepper.
  3. Bring everything to a simmer and let it cook for about 20 minutes to allow those flavors to meld perfectly.
Serving
  1. Serve hot with lime wedges, chopped cilantro, and sliced radishes on the side.

Notes

Store leftovers in an airtight container in the fridge for 3-4 days or freeze for longer storage. Reheat on the stovetop or microwave.
