  • 2 pounds potatoes, peeled and cut into wedges Yukon gold or red potatoes are good alternatives.
  • 1/4 cup extra virgin olive oil
  • 1/4 cup freshly squeezed lemon juice Adjust based on your taste preference.
  • 4 cloves garlic, minced More garlic can be added for extra flavor.
  • 2 teaspoons dried oregano
  • 1 teaspoon salt, to taste
  • 1/2 teaspoon freshly ground pepper
  • 1 cup low-sodium vegetable broth

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. In a large mixing bowl, whisk together the olive oil, lemon juice, minced garlic, oregano, salt, and pepper.
  3. Add the potato wedges to the bowl and toss until they are evenly coated.
  4. Transfer the marinated potatoes to a baking dish and pour the vegetable broth over them.
Cooking
  1. Cover the dish with aluminum foil and bake for 30 minutes.
  2. Remove the foil and bake for an additional 20-25 minutes, stirring halfway through for even crispiness.
  3. Serve hot, garnished with fresh herbs if desired.

Notes

Store leftovers in the fridge for up to 3-4 days or freeze for up to a month. Reheat in the oven to regain crunch.
