Ingredients
  

For the pork chops
  • 4 pieces pork chops Juicy and fresh
  • 4 cloves garlic, minced For a strong garlic flavor
  • 1 cup cream of mushroom soup Can be substituted with cream of chicken or homemade white sauce
  • 1 cup chicken broth Vegetable broth can be used for a vegetarian option
  • Salt and pepper to taste Season as preferred
  • 2 tablespoons olive oil For browning the pork chops
For the potatoes
  • 4 cups leftover potatoes, diced Can use fresh potatoes, adjust cooking time accordingly

Method
 

Preparation
  1. Heat olive oil in a skillet over medium-high heat.
  2. Season the pork chops with salt and pepper, then brown them on both sides in the skillet.
  3. In a slow cooker, combine the diced potatoes, minced garlic, cream of mushroom soup, and chicken broth.
  4. Place the browned pork chops on top of the potato mixture.
Cooking
  1. Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the pork chops are tender and cooked through.
  2. Serve warm, spooning the creamy mixture over the pork chops.

Notes

Serve with a side of roasted veggies or a light green salad. Leftovers can be stored in the fridge for 3-4 days or frozen for later. Reheat gently with a splash of broth.
