  • 1 lb shrimp, peeled and deveined
  • 1 lb white fish fillets (like cod or halibut), cut into chunks
  • 1 lb mussels or clams, cleaned
Base Ingredients
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 1 can (28 oz) diced tomatoes
  • 3 cups fish stock or broth Vegetable stock or chicken broth can be substitutes.
  • 1/2 cup dry white wine
  • 1 tsp red pepper flakes (optional) For a bit of heat.
  • 2 tbsp olive oil
  • Fresh parsley, chopped (for garnish)
  • Salt and pepper to taste

Method
 

Preparation
  1. In a large pot, heat olive oil over medium heat.
  2. Add the chopped onion and garlic. Sauté until soft and translucent.
  3. Stir in red pepper flakes (if using) and cook for another minute.
Cooking
  1. Add diced tomatoes, fish stock, and white wine. Bring to a simmer.
  2. Add the fish and shellfish to the pot, stirring gently.
  3. Cover and cook for about 5-7 minutes, or until the seafood is cooked through and shells have opened.
  4. Season with salt and pepper to taste.
  5. Garnish with fresh parsley before serving.

Notes

Serve with crusty baguette or garlic bread for sopping up the broth. Store leftovers in an airtight container in the fridge for 3 days or freeze for up to 3 months.
