  • 4 slices bread Choose your preferred type of bread.
  • 1 cup shredded cheese (cheddar or mozzarella) A mix of both cheese types is recommended.
  • Butter for spreading Generously butter the bread for a crispy crust.

Preparation
  1. In a bowl, mix the shredded brisket with BBQ sauce until well combined.
  2. Heat a skillet over medium heat.
  3. Butter one side of each slice of bread.
  4. Place two slices of bread, butter side down, in the skillet.
  5. Top with the brisket mixture and cheese, then cover with the other slices of bread, butter side up.
  6. Cook until the bread is golden brown and the cheese is melted, about 3-4 minutes per side.
  7. Remove from the skillet, slice in half, and serve hot.

Notes

These melts keep well in the fridge for about 3 days. Wrap them tightly in foil or plastic wrap. You can prepare the brisket mixture in advance and store it in the fridge for up to 3 days. When reheating, pop them back onto a skillet for that crispy edge! Variations include using pulled pork or a vegan version with shredded jackfruit and plant-based cheese.
