Preparation
- Cut the hard-boiled eggs in half lengthwise and remove the yolks.
- In a bowl, mash the egg yolks with mayonnaise, Dijon mustard, salt, and pepper until smooth.
- Spoon or pipe the yolk mixture back into the egg whites.
- Top with fresh herbs, and optionally, add smoked salmon and capers.
- Serve chilled as an appetizer.
Notes
Store in an airtight container in the fridge for up to three days. Prepare a day in advance but wait to add toppings until ready to serve.
