Method
 

Preparation
  1. Cut the hard-boiled eggs in half lengthwise and remove the yolks.
  2. In a bowl, mash the egg yolks with mayonnaise, Dijon mustard, salt, and pepper until smooth.
  3. Spoon or pipe the yolk mixture back into the egg whites.
  4. Top with fresh herbs, and optionally, add smoked salmon and capers.
  5. Serve chilled as an appetizer.

Notes

Store in an airtight container in the fridge for up to three days. Prepare a day in advance but wait to add toppings until ready to serve.
